Chef Bruno Breillet at the Casa

We couldn’t be more excited to welcome our first chef residency to the fermentary for Madre Hour at The Casa – and trust us when we tell you we pulled out all the stops to get him over from his home in France, during a pandemic, to cook for you. There’s a reason for that.


Bruno started his career in food on London’s pop-up market scene before moving to permanent stalls in 2 North London markets. Voraciously participating in London’s central London festivals, he already had a loyal following by the time he launched his first bricks and mortar operation; Bruno's Bakes and Coffee in Rochester, Kent, specialising in more of what he’s best known and loved for; over-the-top & over-indulgent food pop-ups and events besides a solid range of ‘everyday’ bakes (there’s nothing ‘everyday’ about Bruno’s cooking), coffee and savoury food.  


Always drawing from his French culinary heritage and obsessive love of international food, he’s won numerous great taste awards alongside prizes from Bursary Good Food Shoe/Masterchef and other baking comps and is in the process of completing his first cookbook on coffee shop bakes He’s currently sharing that passion, running culinary experiences where he’s based now in the South of France.


Bruno famously likes a challenge – so we’ve asked him to kick off our series of residencies with a bang! We don’t want to give too much away, but it’s safe to say he’ll be exploring and reinforcing our Casa concept with culinary riffs on our core principles; expect fermented, sustainable, alive and culturally diverse using vibrant flavours and native and local ingredients.
