Our top Madre and founder, Nicola Hart, didn’t know that a trip to Brighton would alter the course of her life. On the surface, it was an inconspicuous event: she went to a restaurant and tried a kefir drink. Little did she know how momentous that first sip was!

When was the last time you realised your life had changed?
Our top Madre and founder, Nicola Hart, didn’t know that a trip to Brighton would alter the course of her life. On the surface, it was an inconspicuous event: she went to a restaurant and tried a kefir drink. Little did she know how momentous that first sip was!
So, how did she go from working in the film industry to running a business at the cutting edge of the drinks sector?
Well, Madres, the simple answer is it didn’t happen all at once. The adventure started when we brewed our first batch of homemade kefir water from Nicola’s kitchen. We were excited: finally, a legitimate alternative to booze that was not only delicious, but also satisfied all cravings and delivered the hopsy mouthfeel of alcohol.
After doing some research into kefir recipes, we set out on a mission to perfect our own. How to do kefir water right? After many trials and taste tests and tweaks, we settled on our original Lemon & Ginger flavour, which we still love today.
It didn’t take long to realise we had a business: our friends were enthusiastic, and soon we had a small but dedicated band of in-the-know followers. We played around with names - Krystal Kef, No.1 Water Kefir, Agua de Madre - before deciding on the latter: the name comes from the ‘mother’ culture used in the fermentation process. That’s how Agua de Madre, our kefir brand, was born.
Before long our fans were telling us we had the best kefir in London. Things got serious and we had to upscale, moving production to our Arch at 12 Bohemia Place, Hackney. We’re proud to still be a London kefir water.
We love our Arch: we have three giant ceramic eggs where we do our brewing, mixing our Tibicos live culture with filtered water, organic dried fruit and organic cane sugar. Liam, our Head of Production, has loads of experience as a winemaker in South West France, California, New Zealand and Australia, and he works tirelessly with our Head Brewer Charlie to perfect the taste of every single Agua de Madre batch.
It’s this dedication to taste that sets us apart from the crowd. Agua de Madre never compromises, producing a deliciously refreshing drink that just so happens to have billions of live cultures and is also the perfect drink… talk about perks, eh?!
We’ve since developed more exciting kefir recipes, as well as Remedio Naturale, a sustainable by-product of the fermentation process - the delicious fiery lemon and ginger paste with some top chef fans.
