This recipe calls for chunky, rough-cut veg, thoroughly marinated in Remedio Naturale and garlic. The veg takes on a rich, complex flavour: the Madre finds it hard to believe there’s no meat involved! Before starting out, make sure you have skewers (bamboo/metal) to hand. This recipe makes enough for three people.
What you’ll need:
For the marinade:
- 3tbsp Remedio Naturale
- Glug of olive oil
- Garlic, crushed
- Salt
For the Skewers:
- 2 red onions, in chunks
- Half an aubergine, roughly sliced
- 1 red pepper, roughly sliced
- 1 yellow pepper, roughly sliced
- 1 courgette, roughly sliced
- Large mushrooms, roughly sliced
For the tzatziki
- 3-4 dollops of yogurt (or vegan alternative)
- Half cucumber, grated
- Fresh mint, torn into thin strips
- Garlic, crushed
To serve:
- Pita bread
- Feta (or vegan alternative)
- Agua de Madre
Here's how you do it:
- Make the marinade in a large bowl, whisking together the Remedio Naturale, olive oil, garlic & salt.
- Place all your roughly-cut veg into the bowl and cover thoroughly with the marinade. Leave veg to soak up the flavours for at least 30 mins; the longer the better.
- Now griddle your marinated veg until each piece is lightly scored. Heat your oven to 200°C.
- Build your skewers with the griddled veg.
- Pop the skewers in the oven to roast for 15 mins.
- Meanwhile, make your tzatziki by mixing the yogurt, grated cucumber, mint, salt and garlic together.
- Serve with pita bread and crumbled feta. We like to pair this dish with our delicious Elderflower & Apple water kefir on the side!
